Giant Squid Ink Shiraz is the flagship reserve wine of the Squid Ink range, inspired by the rarity and intrigue of the giant squid and crafted from the finest fruit of a prestigious estate-owned McLaren Vale vineyard. Grown on renowned Black Bay of Biscay clay soils and produced using sustainable viticulture practices, only the most exceptional parcels are selected for this wine.Carefully handcrafted in the winery, the fruit undergoes a cold soak and slow cool fermentation before spending 26 months in predominantly new French oak. Deep, dark and intensely concentrated, it reveals layers of rich dark berries, sweet tobacco, dried herbs and cedar. The palate combines power with elegance, delivering silky texture, focused tannins and remarkable depth. Built for longevity, this exceptional Shiraz will continue to evolve for 15 years or more.

With our love for the ocean and the stunning coastline on the cusp of McLaren Vale being the reason to call this fantastic little town home it made sense to honour that with a name for our Flagship Reserve. Sharing the same rarity as the sightings of the Giant Squid Ink of the ocean to taste our Giant Squid Ink is the opportunity of a lifetime and so we named it after just that. This Estate owned vineyard is the epitome of what defines one of the greatest vineyards in Australia where the famous Black Bay of Biscay Clay soil consistently ensures fantastic depth of colour and flavour. Positioned at about 120m above sea level and 8kms inland this North South facing vineyard in the heart of McLaren Vale is referred to by some as Mayfair. Implementing sustainable viticulture and having true respect for the value of our vineyards and the fruit they create we site select each parcel we deem to be outstanding and split pick it at harvest separating the most prestigious fruit of the vineyard for the Giant Squid Ink.In the winery the Giant Squid Ink Shiraz fruit is treated with utmost respect ensuring quality from start to finish. In open ferments the fruit has a 3-day cold soak prior to slow cool 18C fermentation for gentle extraction of colour flavour and tannin into the wine.Maturation 26 months 85 New French Oak and 5 new American oak remaining 10 older seasoned French.Colour Deep dark rich colour still showing a glimmer of a purple hue.Nose A gorgeous intense nose lifts from the glass with a deep rich dark berry intensity wrapped in a sweet tobacco dried herbs and cedar.Palate With power infused elegance the lush and silky palate captivates. Textured robust but focused tannins build along the full length of palate showcasing an absolutely unforgettable wine. Potential 15 years

The wine was delivered by GSO Courier early this am and was in perfect shipping condition. The bottle temperature was cool to the touch which is amazing given we have been hitting 37C every day for the last week here in our California summer.

I have put the wine into our temperature controlled bottle storage to let them rest for a week (mostly for the 3 bottles of red). I did put one of the Rosés in the frig which we will try tomorrow because we are out to dinner tonight with friends.
Your Rose of Virginia is my favorite rosé, above French and Californians that we have consumed with Tablas Creek “Dianthus” from near Paso Robles being a second.
Now that we have experienced a shipment from you, I am sure we will order a couple of cases more but will wait until weather is cooler for us and the wine.
