One of our most rare and exquisite wines the Late Disgorged Blanc de Blancs is an exercise in patience and discipline. Originally released at six years as our vintage Blanc de Blanc forty dozen is held back to be released at ten or more years of age. This wine demonstrates the incredible ageing potential of Tasmanian grown Chardonnay and the delicious rewards of extended time on yeast lees possible exclusively with the traditional sparkling winemaking method of bottle fermentation. 100 Chardonnay.The grapes for this wine were whole bunch pressed wild fermented followed by full malolactic fermentation and tiraging in October 2014. Ten years ageing on lees and a subtle dosage of 3 grams allows the elegant flavours of the fruit to shine through. All our sparkling wines are made in the traditional method 100 estate grown and made.

A minimum of any 6 bottles is required for each winery you purchase from. We also require bottles to be purchased in increments of 6 as wines are packed and shipped in 6-bottle cases
2014 vintage delivered very small crops of exceptional quality. Spring and summer were fine with reasonably moist soil which typically leads to higher crop levels. However cool windy and wet weather throughout December disrupted fruit set resulting in tiny berry bunches. The remainder of the season brought wonderful weather which allowed full flavour development whilst retaining good natural acidity at low to moderate Baume sugar content. Wines from this vintage will be highly sought after for their rarity and quality.

Tasting Notes
The aroma offers mouth watering lemon blossom with hints of fresh cut lime combined with rich buttered toast and fresh yeast. The years on lees have created a mouthfeel of delicious richness and creaminess which balances perfectly with the remarkably fresh citrus fruits. The exceptional Delamere Chardonnay ensures a zesty backbone of flinty acidity giving incredible length and elegance to this rich generous and profoundly complex wine.
Food Pairings
The Late Disgorged can hold up to just about anything with its beautiful biscuity characteristics and structured acidity. But we suggest enjoying this wine with some fresh oysters or grilled octopus perhaps even alongside roast lamb at Christmas lunch.

The wine was delivered by GSO Courier early this am and was in perfect shipping condition. The bottle temperature was cool to the touch which is amazing given we have been hitting 37C every day for the last week here in our California summer.

I have put the wine into our temperature controlled bottle storage to let them rest for a week (mostly for the 3 bottles of red). I did put one of the Rosés in the frig which we will try tomorrow because we are out to dinner tonight with friends.
Your Rose of Virginia is my favorite rosé, above French and Californians that we have consumed with Tablas Creek “Dianthus” from near Paso Robles being a second.
Now that we have experienced a shipment from you, I am sure we will order a couple of cases more but will wait until weather is cooler for us and the wine.
