VARIETY: Pinot GrisVINEYARD: Thomas BlockCOLOUR: Straw YellowAROMA: The 2025 Paxton Pinot Gris greets the senses with a fragrant bouquet of white flowers, interwoven with notes of jasmine tea. Ripe stone fruits emerge alongside pear drop and a hint of passion fruit. Subtle delicate herbs underpin the aromatic profile, creating a fresh, clean, and inviting expression. PALATE: On the palate, the wine is bright and vibrant, carrying the purity of the fruit with remarkable clarity. The texture is round and silky, with a gentle grip and an integrated acidity, leading to a harmonious finish. The wine is both clean and expressive, showcasing freshness, balance, and a lingering minerality that enhances its elegance.MUSIC MATCH: New Constellation — Hot BloodedPEAK DRINKING/CELLARING POTENTIAL: GOOD: Now. KEEP: 2028VINTAGE: Vintage 2025 was one for the record book: warm, dry, and fast-moving. It was the driest growing season McLaren Vale has seen since 2003, with around 120–200 mm less rainfall than the previous two vintages. A warm and early spring encouraged even budburst and flowering, while a stable summer delivered ideal ripening conditions without any extreme heat spikes. With little disease pressure (and not a single case of Downy Mildew recorded), fruit quality was exceptionally clean. The dry conditions led to one of the most compressed vintages in recent memory, with nearly all vineyards picked within a six-week window between early February and mid-March. Overall, the 2025 season produced expressive, balanced wines with plenty of brightness and structure—reflecting both the heat of the season and the resilience of our organically and biodynamically farmed vines.VINIFICATION: The fruit was selector harvested once sugar and flavours reached optimal levels. The grapes were whole berry pressed without crushing or destemming. The juice was racked off lees and fermented at temperatures between 10-18°C in stainless steel, to encapsulate fruit freshness. The wine was bottled early in its life to capture the unique characters of the variety. ALCOHOL: 13.5%

About Paxton Wines

Paxton Wines — McLaren Vale, South Australia Paxton is a family-owned winery with more than four decades of roots in McLaren Vale, one of Australia's most celebrated wine regions. Founded in 1979 by David Paxton — widely regarded as one of Australia's foremost viticulturalists — the estate has been shaped by a single conviction: that exceptional wine starts in the soil. All Paxton wines are grown exclusively on the family's own vineyards across McLaren Vale, a region renowned internationally for producing wines of exceptional depth and character, particularly from red varieties. No purchased fruit. No shortcuts. In 2011, Paxton became a fully certified organic and biodynamic producer — a milestone that formalised decades of considered farming. The vineyards are managed without synthetic fertilisers or pesticides, with a focus on living soils, natural compost preparations, and minimal intervention from vine to bottle. It's a labour-intensive approach, but one that produces fruit — and wine — of real integrity. McLaren Vale sits just 45 minutes south of Adelaide, where ancient soils, a Mediterranean climate and the cooling influence of the Gulf St Vincent combine to produce wines of genuine complexity. Paxton's vineyards are spread across diverse sites and soil types within the region, giving the wines a sense of place that is difficult to replicate. Paxton wines offer something increasingly rare in the international market: certified organic and biodynamic provenance, single-estate fruit, and a winemaking philosophy built on restraint — all at a price point that reflects the family's belief that premium wine should be genuinely accessible.

Customer Reviews

J Mason
Just a quick note to say I am so glad I found Australia Tasting Room! Since leaving Australia, I have missed some of my favorite wines. I researched other freight companies, but none offered the personal touch service of Australia Tasting Room. You have a great selection from the best vineyards. You added others upon request, and also gave great recommendations when asked. And customer service does not stop with the purchase— The team keep me updated on the shipment every step of the way! I cannot imagine a better service from people who know wine and love to share that knowledge. You have a customer for life! Cheers, J Mason

The wine was delivered by GSO Courier early this am and was in perfect shipping condition. The bottle temperature was cool to the touch which is amazing given we have been hitting 37C every day for the last week here in our California summer.
Well done!
I have put the wine into our temperature controlled bottle storage to let them rest for a week (mostly for the 3 bottles of red). I did put one of the Rosés in the frig which we will try tomorrow because we are out to dinner tonight with friends.
Your Rose of Virginia is my favorite rosé, above French and Californians that we have consumed with Tablas Creek “Dianthus” from near Paso Robles being a second.
Now that we have experienced a shipment from you, I am sure we will order a couple of cases more but will wait until weather is cooler for us and the wine.
Again thanks for an excellent wine and the good service.
Cheers,
Richard A.

The wine arrived last week in good shape - nothing broken or leaked. Your packing design is impressive. Laying it down for a couple of months to settle in. Looking forward to enjoying it. Thanks very much

Australia Tasting Room is a very fine company, with professional direction and management. I appreciate the friendly service, and all your efforts above and beyond to make all deliveries happen. Most impressive were the instant answers and responses any time I had a question. All during a pandemic! Pretty amazing when you think about it.
Highest regards,
Judy M
P.S. One Contact, One Process, and One Delivery - customers and wine treated equally and expertly, with care. You really can’t beat that! Great job.
