Due to the elevation of this vineyard we continue to see a distinct cool climate Pinot Gris expression. Delicate rose petal musk stick and Jasmine floral notes add further lift and aromatic expression.There is a richness and generosity marking the warmer conditions of this harvest that sits across gentle lavender and thyme infused pears. Wet river rocks and slatey mineral texture carry the cinnamon spice we have come to appreciate from this vineyard. Silky acid giving a long and plush extension to the palate.

Winemakers Notes

The warmer and earlier ripening season in the New South Wales high country has given us abundant flavour and ripeness while ensuring nice acid retention and our customary lower pH levels. Crop levels were about average or slightly below culminating in very good flavour build from happy healthy vine canopies. Hand picking and whole bunch pressing has ensured we have minimised phenolic extraction and maintained the delicate floral characters that we prize in cool climate Pinot Gris. The Heifer Station Vineyard is very adept at producing grapes of the quality that we desire. When you have dirt like this you can keep the winemaking simple giving an opportunity for the vines to speak clearly.

Food Pairings

Our Pinot Gris has enough generosity and texture to handle flavour but still carries that cool-climate freshness to keep things lively. It pairs beautifully with Penne allarrabbiata or Spaghetti aglio e olio where the wines ripe pear and apple notes soften the heat and garlic while its silky acidity refreshes the palate between bites.Beyond that it would shine with dishes that balance richness and aromatics. Think roast pork with apple and thyme which mirrors the wines orchard fruit and gentle herbal notes or grilled chicken with a light lemon and herb dressing for something a bit fresher. It also works wonderfully with soft cheeses or a simple antipasto spread where its floral lift subtle spice and mineral texture can really show off.Equally its a wine that holds its own in the glassplush perfumed and easy to enjoy on its own especially in good company.
