PALATE: A celestial dance—fine gravelly tannins ground the wine like planetary dust, while an undulating acidity moves with the grace of an orbiting moon. The amphora imparts a subtle earthiness, a quiet gravitational pull beneath the weightless, silky texture. A touch of stalk adds structural intrigue, like the unseen force guiding the universe. The finish is infinite, a supernova fading gently into the velvet night. At Paxton Wines, we’re anticipating a collection of elegant McLaren Vale wines that authentically express the unique terroir of our region. The season began with good winter rains, replenishing the soil and setting the stage for spring. However, persistent wet and cold conditions throughout spring delayed budburst and slowed shoot growth, with rainfall levels surpassing the region’s average. These conditions led to increased disease pressure and inflorescence loss, with some varieties more impacted than others. Cool summer weather and late flowering ultimately resulted in a delayed harvest, which was further extended by cool, wet autumn conditions that slowed ripening. Despite these hurdles, we remain confident that the wines from this vintage will showcase the depth, balance, and distinctiveness McLaren Vale is known for, reflecting both the challenges and the character of this unique growing season.VINIFICATION: A new adventure for Paxton Wines with a beautiful amphora all the way from Impruneta in the foothills around Florence, Italy. The fruit from the ancient vines was hand picked on a fruit day and partially destemmed and partially left as whole bunches into the amphora for a natural fermentation with no added yeast or any other products. The wine spent 114 days on skins with delicate hand plunges throughout the fermentation and was then gently basket pressed on a descending moon and put straight back to the amphora for further six months before bottling with minimal sulphites.ALCOHOL: 14.5%

Tasting Notes
The 2023 Argilla is Paxtons most adventurous wine and one of its most extraordinary. Fruit from 136-year-old Thomas Block vines was hand picked partially destemmed and partially whole bunch and fermented naturally in a beautiful terracotta amphora from Impruneta Florence. After 114 days on skins and a further six months in amphora the result is something genuinely rare. Subtle blackberry black pepper and a purple whole bunch lift open the nose with raspberry pavlova drifting over a deep earthy core. The palate is silky and weightless fine gravelly tannins and undulating acidity moving in perfect harmony the amphoras quiet earthiness beneath it all. The finish is infinite. A wine made with conviction patience and the deepest respect for the land.

Roasted duck lamb with herbs mushroom-based dishes soft washed rind cheese or charcuterie. A natural wine that shines alongside simple honest food.

About Paxton Wines

Paxton Wines — McLaren Vale, South Australia Paxton is a family-owned winery with more than four decades of roots in McLaren Vale, one of Australia's most celebrated wine regions. Founded in 1979 by David Paxton — widely regarded as one of Australia's foremost viticulturalists — the estate has been shaped by a single conviction: that exceptional wine starts in the soil. The wine was delivered by GSO Courier early this am and was in perfect shipping condition. The bottle temperature was cool to the touch which is amazing given we have been hitting 37C every day for the last week here in our California summer.

I have put the wine into our temperature controlled bottle storage to let them rest for a week (mostly for the 3 bottles of red). I did put one of the Rosés in the frig which we will try tomorrow because we are out to dinner tonight with friends.
Your Rose of Virginia is my favorite rosé, above French and Californians that we have consumed with Tablas Creek “Dianthus” from near Paso Robles being a second.
Now that we have experienced a shipment from you, I am sure we will order a couple of cases more but will wait until weather is cooler for us and the wine.
