Cabernet Sauvignon, as a later ripening variety, often manages to escape the tricky weather conditions that can affect Shiraz and other earlier varieties at budburst and flowering. For 2024 we headed intoripening with a balanced crop, regulated by old vines and their lack of vigour. The mild conditions in 2024 kept us on our toes however the threatening rain didn’t eventuate until well after harvest time for our old Cabernet Sauvignon. After hand picking, our destemmed fruit spent a week in open fermenter with gentle cap management prior to pressing and then maturation in new French hogsheads, from coopers we know and trust, tosupport the fruit and help build the structure of this wine without adding too much oak impact. -Jules Ashmead & Brock HarrisonStyle: Classic, elegantColour: Deep crimsonAroma: Boysenberry, spiced vanillaPalate: Red fruits, laced with fresh winter cooking herbs, unravel gracefully over the palate finishing with a finely tuned tannin profile which lingers with a blend of wooded berryflavours to create a seamless long finish.Oak: 18 months in mostly new French oak puncheonsCellaring: Drink now or cellar confidently for 10 - 15 years from vintage

Reviews 96 points Ray Jordan Wine PilotAnother brilliant wine from the outstanding 2024 Barossa vintage. This is a stylish and expressive cabernet sauvignon that shows how well the variety can perform in excellent years. It comes from very old vines in fact the oldest cabernet sauvignon vines on the estate. The aromatics are a classic blackcurrant and blackberry blend with a faint leafy bay leaf character and a touch of black olive. The palate is seamlessly woven with fine tannins and oak framing what is quite sumptuous fruit. The oak integration is spot on and while it will clearly age well it is already drinking beautifully.95 points Dave Brooks Halliday Wine CompanionAn elegant single-vineyard Barossa Valley cabernet sauvignon matured in seasoned French oak. Crimson with aromas of blackberry dark cherry and boysenberry and underlying hints of dark spice blackcurrant pastille cedar dark chocolate vanillin oak earth and licorice. Its a classically framed wine graceful with a traditional Barossa fruit set suffused with wood spice fine silty tannins and just a sprinkle of crushed herbs on the extended finish.95 points Erin Larkin Wine AdvocateThe 2024 Ashmead Single Vineyard Cabernet Sauvignon leads with bay leaf cassis and sweet pouch tobacco. There are notes too of shaved fennel star anise and licorice with gently minty menthol-like notes that contribute freshness to the wine. The tannins are structural and silky offering a supple framework to the fruit which is balanced and long on the finish. The oak leaves a tiny pinch through the finish but given this wines capacity for graceful aging one would expect it to soften in time. This is an excellent wine from a marvelous vintage. 14 alcohol sealed under screw cap. Estate-grown at the Nuriootpa vineyard the fruit is sourced from a single block planted around 1944. Deep alluvial silt over red and brown earth and limestone near the banks of the North Para River allows the vines to develop deep roots so they need minimal irrigation. As a later-ripening variety Cabernet Sauvignon often avoids the challenging weather conditions that can affect earlier varieties during budburst and flowering. In 2024 the 80-year-old vines produced a balanced crop naturally moderated by their low vigor. Mild seasonal conditions required careful management throughout ripening though significant rainfall did not arrive until after harvest. After hand-picking the destemmed fruit spent one week in open fermenters with gentle cap management prior to pressing. The wine was then matured in new French oak hogsheads from trusted coopers selected to support fruit expression and build structure while keeping oak influence restrained.95 points Andrew Caillard MW The Vintage JournalMedium-deep crimson. Intense cassis herb garden aromas with chinotto notes. Concentrated and classical in structure with cassis fruit and plentiful fine-grainedvigorous tannins. Some underlying savoury notes. Claret-firm finish. Very natural and elegantly styled wine where less is more. 1944-planted cabernet vines. Now2040

Food Pairings
Powerful and structured this Cabernet calls for equally considered dishes. Pair with slow-braised beef cheek venison with a dark fruit sauce or a classic beef Wellington. Aged cheeses like cheddar or pecorino also suit its depth and structure. A wine for collectorsbest enjoyed with time both in the glass and at the table.

Just a quick note to say I am so glad I found Australia Tasting Room! Since leaving Australia, I have missed some of my favorite wines. I researched other freight companies, but none offered the personal touch service of Australia Tasting Room. You have a great selection from the best vineyards. You added others upon request, and also gave great recommendations when asked. And customer service does not stop with the purchase— The team keep me updated on the shipment every step of the way! I cannot imagine a better service from people who know wine and love to share that knowledge. You have a customer for life! Cheers, J Mason

The wine was delivered by GSO Courier early this am and was in perfect shipping condition. The bottle temperature was cool to the touch which is amazing given we have been hitting 37C every day for the last week here in our California summer.
Well done!
I have put the wine into our temperature controlled bottle storage to let them rest for a week (mostly for the 3 bottles of red). I did put one of the Rosés in the frig which we will try tomorrow because we are out to dinner tonight with friends.
Your Rose of Virginia is my favorite rosé, above French and Californians that we have consumed with Tablas Creek “Dianthus” from near Paso Robles being a second.
Now that we have experienced a shipment from you, I am sure we will order a couple of cases more but will wait until weather is cooler for us and the wine.
Again thanks for an excellent wine and the good service.
Cheers,
Richard A.

The wine arrived last week in good shape - nothing broken or leaked. Your packing design is impressive. Laying it down for a couple of months to settle in. Looking forward to enjoying it. Thanks very much

Australia Tasting Room is a very fine company, with professional direction and management. I appreciate the friendly service, and all your efforts above and beyond to make all deliveries happen. Most impressive were the instant answers and responses any time I had a question. All during a pandemic! Pretty amazing when you think about it.
Highest regards,
Judy M
P.S. One Contact, One Process, and One Delivery - customers and wine treated equally and expertly, with care. You really can’t beat that! Great job.
